An Authentic Mexican Tomatillo Salsa is a little tart, a little spicy, and very versatile. This salsa verde is a beautiful bright green and has a hint of smokiness from the roasting. Salsa Verde can be used the same way you use tomato salsa.
INGREDIENTS
1 onion
1 or 2 fresh Pasilla pepper
1 jalapeño
1 tsp granulated onion powder
1 teaspoon Jacobsen® Infused Lemon Zest Salt
2 tablespoons GARLKI ORIGINAL fermented garlic paste
1 tsp Red chili flake, or to taste
1/2 cup fresh cilantro
Pepper to taste
Olive oil
Step 1
Chop the onion, Deseed and rough chop the pasilla, halve the tomatillos, de-stem and de-seed the jalapeño (or keep the seeds in if you like it spicy). Put everything on a roasting pan, salt liberally, drizzle liberally with olive oil. Broil on the middle rack until everything is cooked with a little bit of char.
Step 2
Toss everything in a Vitamix and blend.
Step 3
To the blender: Add Garliki, onion powder, salt, pepper, chili flake. Taste as you go, add more of any ingredient to highlight.
Step 4
Add fresh cilantro as the last ingredient, and blend it up.
Step 5 (Optional)
Finish with fresh lime at the end. However, the acidity of the tomatillo and the inherent tang of the Garliki can stand on its own!
